Bacanora Festival
Bacanora Festival May 5, 2018 at La Casa del Bacanora

It has been some time since Puerto Peñasco has had a tequila festival but on May 5th, Cinco de Mayo, La Casa del Bacanora will be introducing Bacanora to the residents and tourists in Rocky Point to Bacanora. The event is open to the public and will have FREE Bacanora tastings and you can purchase your favorite one right there. It will run from noon – 10 p.m. on the street in front of Los Martinez and it is where the sunset boats are moored on the way into the Old Port.

The main sponsor of the event is Sunora Bacanora, who up until now has been marketing the product in the United States with it’s Blanco and Cream Bacanora.  The Cream Bacanora has a little history of how it is blended.  They take the Bacanora to Nevada and then bring the cream from Wisconsin to be mixed into this delightful drink.  They like to say “goodbye Bailey’s”…  “hello Cream Bacanora.”  The Bacanora Blanco is 84% proof and the Bacanora Cream is 30% proof so watch out.

There will be at least 7 Bacanora producers in attendance as well as original products from Sonora such as Coyotas (a wonderful little pastry made with different fruits, which can be found everywhere in Hermosillo.  Next there will be machaca, jams and jellies, salsa with Chili Piquin (which is wonderful spice used in so many Mexican dishes) and olives just to name a few.

There will be traditional and folklore dancing, food from various restaurants as well as a contest with the various bars as to who can make the best drink using Bacanora Blanco or Cream Bacanora.  Should be interesting to see what our talented bartenders come up with.

Just to give you a little information on Bacanora.  The town named Bacanora is where it all began and it is only produced in the State of SonoraBacanora is located east of Hermosillo.  The plants are grown in the mountains there from the Agave Pacifica or Agave Yaquiana as it is also called, just like  it has been for several hundred years.  In the year 2000 there was a declaration that Sonora is the  only state in which it can be made.  It is regulated by Consejo Sonorense Promotor de la Regulacion del Bacanora which was formed in 2006.  The Agave Pacifica looks very much like the Blue Agave so of course the difference being it is not blue.

After growing for 6-7 years they are then hand selected and harvested.  The process is similar to Tequila.  The leaves are then cut off and the core is roasted in underground pits for a couple of days.  After that it gets mashed and begins to go through the fermentation process from anywhere between 6 and 12 days where it is placed in stainless steel stills and heated with charcoal that is made from the Mesquite Tree. It goes through a double fermentation process to become Bacanora.  When you taste Bacanora you will sometimes get that smoky taste for which it is known to have.  As you can see from the chart below, you will see how the different types of Agave are used and what they make.  Bacanora is generally a higher proof than Tequila.
